For Nasi Impit:

– 2 cups of rice

– Water for boiling

– A pinch of salt

– Banana leaves (optional)

– Toothpicks (optional)

For Kuah Kacang:

– 2 cups of roasted peanuts

– 2 cloves of garlic

– 1 onion

– 2 tablespoons of oil

– 2 cups of water

– 2 stalks of lemongrass

– 3 kaffir lime leaves

– 1 teaspoon of tamarind paste

– 1 tablespoon of palm sugar

– Salt to taste


For Nasi Impit:

1. Rinse the rice until the water runs clear. Drain well.

2. In a pot, bring water to a boil and add a pinch of salt.

3. Add the rice and cook until tender.

4. Once cooked, drain the rice and let it cool.

5. Cut the rice into small cubes and set aside.

6. If using banana leaves, cut them into squares and wrap the rice cubes tightly.

7. Secure the ends with toothpicks.

8. Steam the rice cubes for about 30 minutes or until firm.

9. Remove from heat and let it cool before serving.

For Kuah Kacang:

1. In a blender, blend the roasted peanuts until finely ground.

2. In a pan, heat the oil and sauté the garlic and onions until fragrant.

3. Add the ground peanuts and stir well.

4. Pour in the water and add the lemongrass and kaffir lime leaves.

5. Simmer over low heat for about 20 minutes.

6. Stir in the tamarind paste, palm sugar, and salt to taste.

7. Continue simmering for another 10 minutes until the sauce thickens.

8. Remove the lemongrass and kaffir lime leaves before serving.
