  • Sugar to taste


Now that you have gathered all the ingredients, let’s get started on cooking rendang daging:

1. Prepare the Spices

First, you will need to prepare the spices. Peel and dice the shallots, garlic, red chillies, dried chillies, lemongrass, ginger, and galangal. Grate the turmeric. Then, grind all the spices into a smooth paste using a blender or a mortar and pestle.

2. Cook the Meat

Heat the cooking oil in a large pot over medium heat. Add the ground spices, kaffir lime leaves, cinnamon stick, and star anise. Stir-fry the spices until fragrant.

3. Add the Meat

Add the meat to the pot and cook until it changes color. This step helps to seal in the flavors of the meat.

4. Add Coconut Milk

Pour in the coconut milk and bring the mixture to a boil. Reduce the heat to low and let it simmer for about 2 hours or until the meat becomes tender and the sauce thickens. Stir occasionally to prevent the sauce from sticking to the bottom of the pot.

5. Seasoning

Taste the rendang sauce and adjust the seasoning with salt and sugar according to your preference. The rendang should have a balance of savory, sweet, and slightly spicy flavors.

6. Serve

Once the meat is tender and the sauce has thickened, your rendang daging is ready to be served. Garnish with some sliced red chillies and serve with steamed rice or traditional Malay bread, such as roti jala or nasi lemak.
